Recipe: CASHEW CHICKEN SALAD

Makes 4 servings
1/4-pound cooked chicken strips
3 cups prepared cole slaw
1 (8.5-ounce) can mandarin oranges in light syrup, drained
1/3 cup cashews, chopped
1 tablespoon olive oil, optional
Slice chicken strips diagonally. In a bowl, toss together all ingredients. Reserve some cashews for garnish and serve.

Recipe: Banana Coffee Cooler

Serves 4
1 c. cold brewed double strength coffee
(decaf or regular)
1 large ripe banana, sliced
1 pint coffee or vanilla ice cream, softened
Place the coffee and banana in a blender container; cover. Blend on high speed until smooth. Add the ice cream. Cover and blend until smooth.

Recipe: Gala Grape Summer Punch / Slushies

It’ll put a smile on his face!
6 oz. frozen lemonade
12 oz. frozen grape juice
6 cups cold water
12 grape ice cubes
(made from 1 package Kool-Aid)
1 lemon (sliced)
For punch: Mix lemonade, grape juice, and water in punch bowl. Stir until melted. Add ice cubes. Stir again. Add 7-up and sliced lemon.
