5 slices whole grain bread cubed
1 1/2 cups skim milk
1 (15 ounce) can pumpkin
1/2 cup sugar
1 Tsp. pumpkin pie spice
1 Tbsp. chopped pecans
Preheat oven to 350°. Lightly spray a large ceramic or glass baking dish with vegetable oil cooking spray. Combine pumpkin with pumpkin pie spice, milk and sugar. Add cubed bread and mix well. Pour into baking dish and top with pecans. Bake for 45 minutes or until firm in center. Cool for 5 minutes and slice into 8 pieces.
