Thanksgiving Recipe

Makes 8 servings. Can be doubled.

1 pound loaf of day-old bread, cut into 1/2″ cubes
1/3 cup margarine
1 medium (1/2 cup) oinion, chopped
1/2 cup celery, chopped
1/4 cup raisins
1/4 tsp. salt and 1/8 tsp. pepper
2 eggs, lightly beaten
2 cups milk
2 medium-size apples, pared, cored, and chopped (approximately 3 cups)

Preheat oven to 375°.
Place bread cubes on a cookie sheet and bake for 5 minutes. Transfer to a large bowl. Lower oven temperature to 350°. Melt butter in a saucepan. Stir in onion, celery, salt, and pepper. Cook 3 minutes. Pour over bread. Add milk and eggs; stir to moisten. Gently stir in apples and raisins. Spoon into a greased 6-cup baking dish; cover. Bake 350° for 1 hour.
